1. Harvesting: Grapes are harvested at optimal maturity to ensure an ideal balance of sugar, acidity and flavor. Harvesting can be done manually or mechanically.

2. Sorting & Destemming: Harvested grapes are sorted to remove leaves, stems and damaged berries. Destemming is done to avoid bitterness.

3. Pressing & Pressing: Grapes are gently crushed to release the juice, which is then separated from the skins and seeds to keep the wine clear and prevent the extraction of unwanted tannins and pigments.

4. Clarification Instructions: The juice is then sedimented or centrifuged to remove solids, resulting in a clarified juice ready for fermentation.
