The fermentation of beer in the stainless steel fermentation vessel is a critical stage in the brewing process, where wort is transformed into beer through the action of yeast. Here is a brief overview of each step:

1. Wort Transfer & Oxygenation:

After brewing and cooling, the wort is transferred to a sterilized beer fermentation tank for sale.

-Oxygen is introduced to support yeast growth, which is critical for the initial stages.

-Yeast is added (dosed) to start fermentation.

2. Lag Phase (0-24 hours)in the beer fermenter:

-Yeast adapts to the new environment.

Oxygen is used for cell wall synthesis and yeast reproduction.

-Minimum carbon dioxide and alcohol are produced.

-Temperature control is critical, usually 18-22°C for beer and 8-12°C for lager.

3. Active Fermentation (1-7 days):

Yeast metabolizes sugars, producing alcohol, carbon dioxide, heat, and flavor compounds such as esters and phenols.

-Klaus, a foam layer, forms on the surface of the wort.

-Metabolic activity causes a slight increase in body temperature.

-Carbon dioxide is released through an airlock or blow-off tube.

4. Diacetyl Rest in the industrial fermentation tank (Beer or Some Ales):

- Towards the end of fermentation, the beer is kept at a higher temperature (~18°C) for 1-2 days.

This helps the yeast absorb diacetyl, a compound that imparts a buttery flavor.

5. Conditioning/Secondary Fermentation (Optional):

- The beer is cooled to 2-4°C and kept for several days to weeks.

- This stage helps the yeast and particles settle, clarifying the beer.
